Made this tonight with some tweaks, forget to buy onion, but subbed mushrooms out for the potatoes since we're on a no grains & starch diet this month (Thanksgiving will be the exception!). Total hit with my family and so easy to prep and cook! And the perfect dish to make/cook while watching a football game on Sunday. I have enjoyed reading your recipes and made this recipe tonight for dinner. Everyone in my house loves Italian sausage, so it’s a staple on our kitchen table whether we make sausage and peppers on the grill, toss them with pasta like this Spicy Whole Wheat Linguini with Sausage and Peppers or serve them like this, with potatoes and veggies, my favorite way to eat them! Also I forgot the rosemary and didn't have any dried around but I did have Italian seasoning that had rosemary in it. If you use a zip-top bag to coat the veggies with the oil and seasoning then it truly is a one-dish meal! Was really yummy! I am so glad I made it. Gina, you advised Jenn to add pre-cooked sausage in the last 10 minutes, but according to the website for the sausage you used, it is in fact pre-cooked. Plus, I won't have to clean my baking sheet. I know it says 1/4 of the recipe as a serving size but if you were to measure it, what would be the serving size? Made exactly as listed, and it was ok. Easy prep and clean up. A no fuss, hearty meal will go over well in my house. Do you think using sweet potatoes or butternut squash would work too? Excellent! Anyhow, I did the sausage for the full 30 minutes and when I took everything out of the oven and tasted it I almost started crying because it was A-MAZ-ING. I ended up getting the Asiago & Red Pepper chicken sausage (didn’t have the Italian flavor)- plus red potatoes, onions, peppers and I might throw in some mushrooms that I have on hand.
