If too thick, add a bit more oil or soy sauce. Waiting the time with the roast covered really made it moist as well. I scooped out the veggies, and then used a can of chicken stock and some cornstarch to make a gravy out of the pan drippings. Had to take it out and put on a different pan. They were SO delicious!! Although, I used a meat thermometer, because my loin was perfect in 1 1/2 hrs. This was a superb dish! Pour over the sauce and garnish with fresh sage leaves. Made the recipe without the veggies. I will definitely make it again. Extremely favorfull and easy to make. My 2 girls and husband loved it. Perfect. The flavor was good, but the meat was ruined, unfortunately. Using an oven thermometer and letting it rest is a must. Too high heat? I tried to apply the sauce to only cover the loin, but it ran off and burned on my foil. The shape and size of pork loin and pork tenderloin are very different, so they should not be used to substitute for each other in recipes. I'm not even sure if I used a loin.
