Pickled carrots (and usually daikon) are what give banh mi a really unique taste. I sliced two carrots and two cucumbers on the thinnest mandolin setting in a medallion shape. Always make sure you (or your friends) check the label to make sure! I portion out the vinegar/sugar/salt as well and put it in a little baggie tucked on top of the pork in the snapware. I picked the cucumbers with the carrots and made a (not so skinny) sriracha aioli. This slow cooker is so great, I actually own several!
